Potato Bhaji

Ingredients
  • 4 large potatoes, cubed
  • 1 large onion, coarsely chopped
  • 4-5 fresh green chili, chopped
  • 1 tbsp chopped ginger
  • ½ tsp turmeric powder
  • 1 tsp coconut oil
  • 6-8 curry leaves
  • salt to taste
Directions
  1. Cook potatoes, onion, green chilli, ginger, turmeric powder and salt in 5 cups of water. Remove from heat.
  2. Add curry leaves, oil, and stir well.
Serves 6-8 

TIC
Quantity of water can be varied depending on the required consistency.
